For the evening that mainly means one thing: it depends which of the two layers you move in. In one, distance gets noticed; in the other, performance does.
Small enough that people run into each other
The town centre around Gallusplatz and Multergasse is compact. Anyone well connected professionally will fairly reliably meet someone on a Friday evening. That isn't a reason not to do it, it is a reason to choose the place deliberately rather than spontaneously.
Many therefore move the evening to Lake Constance, to Rorschach or Arbon, where it is quieter and the setting still works. Or straight to Zurich, a good hour by train.

Culturally there is more than the town's reputation suggests: the Abbey Library as a UNESCO World Heritage site, the Theater St. Gallen, the Tonhalle. Cultural evenings followed by a meal are a more common occasion here than a dinner on its own.
